Matcha Energy Bites
Ingredients:
-1 cup old-fashioned oats
- 1/2 cup almond butter (Big Spoon in store)
- 1/4 cup honey
- 1/4 cup unsweetened shredded coconut
- 1/4 cup chopped almonds
- 2 tbsp matcha powder
- 1 tsp vanilla extract
- Pinch of salt
Instructions: 1. In a large bowl, mix together the oats, almond butter, honey, coconut, almonds, matcha powder, vanilla extract, and salt until well combined.
2. Using your hands, roll the mixture into bite-sized balls and place them on a baking sheet lined with parchment paper.
3. Refrigerate the energy bites for at least 30 minutes to set.
4. Once the energy bites are set, store them in an airtight container in the refrigerator for up to one week.
