Stinging Nettle Soup

- 2/3 cup dried stinging nettle

- 1 medium onion

- 2 garlic cloves, minced

- 1 medium potato

- 4 cups bone broth (or veggie broth)

- 1 tblsp EVOO (i used our garlic)

- salt and pepper to taste

- lemon juice (optional, but i recommend it)

-heat oil over medium heat in a saucepan. Add the onions and garlic. Sauté until translucent.

-add potatoes and nettles. Stir well.

-pour in the broth. Bring to a boil and then reduce the heat to a simmer. Cover and cook 15-20min.

-transfer to a blender and blend until smooth. You may need to do in batches.

-season with salt and pepper. And add lemon juice if desired.
