Roasted Strawberry Whipped Ricotta Toast
Ingredients:
-1 pint fresh strawberries, hulled and sliced
-2 tblsp Honey + extra for drizzling
-1 tsp Balsamic vinegar (Cask 10, Strawberry, Fig, Blueberry, Blackberry)
-pinch of sea salt
-1 cup ricotta cheese
- 1/2 tsp vanilla extract
- 4 slices of crusty bread, toasted
- Fresh thyme or basil (optional)
Instructions:
Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
In a bowl, toss the sliced strawberries with 1 tblsp honey, balsamic vinegar, and a pinch of salt.
Spread the strawberries in a single layer on the prepared baking sheet.
Roast for 20-25 minutes. Let cool.
In a medium bowl, combine the ricotta cheese, 1 tblsp honey, and vanilla extract.
Using a hand mixer or whisk, whip the ricotta until smooth and creamy.
Spread a generous layer of whipped ricotta on each slice of toasted bread.
Top with roasted strawberries.
Garnish with fresh thyme or basil leaves, if desired, and drizzle with extra honey.
