Quick and Easy Chickpea Salad
Need a delicious healthy recipe that doesn’t take a lot of time but still tastes delicious and provides you with all the nutrients you need to keep your energy levels up while at work? Look no further than this quick and easy meal that takes just a few minutes to prepare.
Chickpeas: Drain a can of chickpeas, then rinse it.
Bell Pepper: Dice a bell pepper (about a handful). (We have red and green greek peppers in our physical location)
Cucumber: Dice a cucumber (about a handful).
Seasonings: Place it all in a bowl and drizzle with olive oil, red wine vinegar, salt and smoked paprika. (We have a delicious organic arbequina olive oil in our shop as well as a red wine vinegar)
If you’d like add additional veggies or fruits such as avocados or tomatoes
Stir it all together and enjoy!!
For better flavor let sit for a while so the flavors can come together and generally best served chilled.
