Roasted Red Pepper Spinach Mozzarella Stuffed Chicken
Ingredients:
4 Chicken Breasts
1 cup Roasted Red Peppers
1 cup Fresh Spinach
1 cup Shredded Mozzarella Cheese
2 tblsp Tuscan Olive Oil (or any of our EVOO)
1 tsp Garlic Powder
1 tsp Italian Seasoning
Preheat oven to 375 degrees
Make a deep cut along the side of each chicken breast to create a pocket. Do not cut all the way through.
In a small bowl, mix together olive oil, garlic powder, Italian Seasoning, and salt and pepper
Brush over both sides of the chicken breasts
Stuff each breast with equal amounts of roasted red peppers, spinach, and mozzarella cheese
Place in a baking dish and bake for 25-30 minutes
